Some specific pairings are, butter-poached lobster or crab, tomato-based dishes, lighter preparations of poultry like chicken, Caesar salad, Niçoise Salad, seared tuna, aren tartare. Trimbach Riesling 2015Riesling is the most emblematic of Alsace grape varieties. Its delicate bouquet, the fine balance between its dry personality, its distinguished fruitiness and its natural vitality contribute to its exceptional richness. As the house style dictates, it is vinified dry. Riesling can be enjoyed throughout the meal, and also with Alsace specialties, shellfish, seafood, quality fish, sushi/sashimi, white meats in white wine sauces or spices, pork dishes and refined spicy or Asian dishes.
Trimbach Reserve Pinot Gris 2015The "Réserve" quality is the result of a rigorous selection of fully-ripe grapes from the Ribeauvillé region. It defines a structured, balanced wine, which is both fruity and subtle. This elegant Riesling, dry and precise, is a worthy accompaniment to a wide variety of dishes. It pairs well with sauerkraut, fish (fried, grilled, smoked, in a sauce, raw…), and white meats. Ageing potential: The best vintages can be kept for ten years.

The weight is impeccable with perfect balance and integration hitting all points of the palate. Incredibly versatile at the dinner table with flavors of golden apple, roasted coconut, citrus and pineapple appealing to the last splash in the glass. Seriously, this wine goes with just about everything, all the time, including nothing, which is sometimes a fine option, too.
A to Z Wineworks Pinot Noir 2016Clear and vibrant, the 2014 A to Z Oregon Pinot Noir opens with rich primary aromas of strawberries, cherries, blueberries, raspberries, even cranberries, developing to violets, red currants, pipe tobacco, iron and wet stone. The mid-palate reveals ripe tannins and crisp acidity with a touch of minerality and spice (cinnamon, anise, saffron, sandalwood) lending greater complexity. This wine, succulent with great concentration, finishes long and rich with classic Oregon freshness. The harmony and depth of the 2014 Oregon vintage are on full display in the 2014 A to Z Wineworks Pinot Noir. Underwood Pinot Gris 2018The grapes for our Underwood Pinot Gris come from a few of our favorite vineyards from across the Willamette and Umpqua Valleys. The Willamette Valley fruit brings fresh acidity and citrus to the wine while the southern Oregon fruit adds stone and tropical fruit components. These wines are fun, refreshing, elegant and transparent. This pinot gris was fermented in 100% stainless steel and sur lee aged for 4 months. It strikes a beautiful balance between citrus and tropical. It is focused and refreshing on the palate. Tasting Notes: Lemongrass, green apple, white stone fruit.

A to Z Wineworks Riesling 2018Brilliant and clear with emerald highlights, the 2018 A to Z Wineworks Oregon Riesling is expressive and expansive on the nose. Initial lime zest and tangerine aromas mingle with gooseberry, apricot, meringue, honey, mint, jasmine, gardenia, and green tea. The palate is impeccably balanced with refreshing mouth-watering acidity and a bare touch of sweetness. It is bright, intense and exotic with ample richness and texture that lingers, finishing clean, fresh and juicy. Fun and serious all at the same time, this wine will gain in complexity over the next ten years, but it would be a shame to wait that long.
