Pale straw yellow with greenish reflections. The nose is fragrant and fruity, with hints of pear and apple and a subtle floral note. In the mouth it is balanced and delicate. Long and persistent on the palate. Pairings: It goes well with many dishes based on fish, especially with fried red mullet and squid or marinated anchovies. It is an excellent companion to light dishes such as risotto with vegetables or chicken cotolette. It is a very good choice for an aperitif, accompanying slightly aged cheeses, such as soft goats, or pecorino less than 12 months mature.
