Christian Moreau owns 4 hectares in the Vaillon cru. The vineyards are situated close to Chablis, on the left bank of the Serein River, and benefit from an excellent south/southeast exposure. The soil is also made up of kimmeridgien clay, a soil specific to the Chablis region. It is rich in fossil shells of a small oyster, Exogyra virgula, frequently found in Chablis soil. The vineyards are located in the heart of the Chablis district, on the left bank of the Serein River, with an optimal south-south east exposure. The soil is Kimmeridgien limestone and calcareous clay that dates to the upper Jurassic Age. The Kimmeridgien limestone is specific to the Chablis region, and it is rich in fossil shells of a small oyster, Exogyra virgula, frequently found in Chablis soil. These calcified creatures lend the wines a pronounced and distinctive mineral complexity. The wines are made utilizing pneumatic pressing, cool racking and temperature-controlled fermentation. In general, all vinification and aging is done in stainless steel vats. Food Match: Shrimp, shellfish, scallops, salmon, oysters, lobster, fish, crab, chicken.

Wine Spectator

Rich and creamy, with hints of vanilla and spice augmenting peach, melon and yellow plum. Beautifully integrated now, with a lingering aftertaste of spice and mineral. Should only get better. Best from 2011 through 2022.

Burghound

A lightly spiced and distinctly floral nose that is very fresh and carries plenty of obvious Chablis character merges into textured, precise and chiseled middle weight flavors that possess ample amounts of dry extract that do a fine job of buffering the firm acid spine as well as imparts a chewy and serious texture to the finish. Lovely. 89-92

Wine Advocate

Scents of peony, iris and ripe peach with pungent hints of nettle and white currant in the nose of Moreau's 2008 Chablis Vaillons are strikingly similar to those of their A.C. wine of this vintage, as is the harmonious and delightful cohabitation of textural creaminess with juicy refreshment. But here there is greater intensity of flavor yet at the same time a greater sense of lift and refinement. Pungent yet suggestively sweet notes of candied citrus rind and crystallized ginger; a bitter note of huckleberry; and saline, chalky notes all add to the appeal and complexity of a long, luscious, vivacious finish. This beauty should be worth following for at least 5-7 years.
